The hubby and I are trying to incorporate more veggies into our diet and cut down on our intake of sugar. I grew up a green beans and corn kind of girl,(yes, I KNOW corn doesn't really count as a veggie), but over the years I've incorporated all kinds of other veggies such as fresh spinach (don't even think about cooking it), cukes, peas, tomatoes, broccoli (again, don't even THINK about cooking it), etc.

Hubby, on the other hand, was subject to all kinds of torturous veggies like Brussels sprouts (oohhh, gag me), cauliflower and beets. Hell, his mom didn't work, so she had all day to think of incredibly hideous combinations of veggies that she FORCED her kids to eat.

So guess what we had for dinner last night. No, really, go ahead and guess...I'll wait.

OK, so we had grilled sperrygrass (AKA asparagus), grilled portebello mushrooms, spinach dip and carrots. We had 4 shrimp left over from the night before, so we had those, too. (we probably ate more veggies last night than we have in the whole week before combined) The sperrygrass was fairly good. I did a soy/sesame oil/garlic marinade. The 'shrooms on the other hand, were OK I guess. Hubby had doctored them all up w/ some spices and stuff, but I just couldn't get around the "texture" of them. I can't eat bananas because of the texture, and I had a hard time choking down a few bites of the 'shroom.

So while I have broadened my world of veggies, I really think I just need to dust off the cookbooks and find some new recipes for green beans and corn.
